This is a adaptation of Plum Cupcakes from the Primrose Bakery Book that I got as a Christmas present from my hubby. I used blackcurrant jam instead of plum jam but it came out absolutely gorgeous. I used Tate & Lyle icing sugar as recommended by the Primrose ladies and it tastes great.
